Low Carb Bread at Home

images (7)One of the biggest things that people miss when they start eating a low carbohydrate diet, is bread and pastas. The point behind eating foods that are lower in carbohydrates is to reduce your blood sugar and insulin production. Those blood sugar spikes can lead to weight gain and an inflammatory response in the body that increases the risk for specific diseases and medical conditions.

Now, you can have breads that you either make at home or purchase at the store, that are not made with regular white or wheat flour. Instead, they are made with flours that are much lower in carbohydrates and reduce your insulin load.

Unfortunately, some of the breads that are sold at the grocery store labeled low carbohydrate will increase your blood sugar as much as eating real bread. The best way to find low carb bread that is really low carb is to look for independent testing or to make it yourself at home.

Start with a low carbohydrate flour from a reputable company, like Bob’s Red Mill Low Carb Bread flour. Making the bread at home is also more cost effective. And, when combined with a bread machine, the process is simple, easy AND cost effective. Using a bread machine with the appropriate ingredients you can have fresh bread every day.

Many low carbohydrate breads are also gluten free, or free of gluten products often associated with wheat. However, just because a product is gluten free doesn’t mean it is also low carbohydrate and visa versa.

RECIPE 1:a

2 1/2 c almond flour
1/2 tsp sea salt
1/2 tsp baking soda
3 eggs
1 tablespoon agave
1/2 tsp apple cider vinegar

In a large bowl combine the first 3 ingredients. In another bowl whisk the eggs and then add the agave and vinegar. Stir the wet ingredients into the dry. Scoop the batter into a well greased loaf pan and bake for 300 degrees for 45-55 minutes.

RECEIPE 2:

1 1/2 cup blanched almond flour or 1/2 cup coconut flour
5 TBS psyllium husk powder
2 tsp baking powder
1 tsp sea salt
2 1/2 TBS apple cider vinegar
3 egg whites – 6 egg whites if using coconut flour
A bit less than 1 cup of boiling water

Preheat the oven to 350 degrees F.

Combine the flour, psyllium powder, baking powder and salt. Mix until well combined. Add in the eggs and vinegar and mix until a thick dough. Add boiling water. Mix until well combined and dough firms up.

Form into a loaf and place onto a greased baking sheet. Bake for 55 minutes; remove from the oven and allow the bread to cool completely.
